  1.             KING RANCH CASSEROLE
  2.  
  3.             1 large fryer chicken
  4.             1 med onion chopped
  5.             3/4 c chopped celery
  6.             1 tspn salt
  7.             1 can cream of chicken soup
  8.             1 can cream of mushroom soup
  9.             12 corn tortillas cut in pieces
  10.             1 chopped green pepper
  11.             1 can Ro-tel tomatoes
  12.             1 c sharp cheddar cheese
  13.  
  14. Boil chicken, onion, celery & salt until chicken is tender
  15. Remove chicken from broth and cool, remove bones, chop chicken
  16. Boil broth down to 1 1/2 c & add soups & mix
  17. Preheat oven to 350 degrees
  18. Arrange tortillas in pieces in bottom of buttered 8 x 12 in casserole 
  19.   with tortillas pieces
  20. Cover tortilla pieces with chicken chunks
  21. Sprinkle with green peppers
  22. Cover with Ro-tel tomatoes
  23. Pour soup mixture over all of it
  24. Cover with foil & bake 35 to 40 min.
  25. Remove from oven and remove foil
  26. Sprinkle with cheese, return to oven, cook til cheese is bubbly
  27. Serve hot
